Spicy Orzo with Feta and Kalamata Olives



Summa Salt Product Used: Spicy Italian

Serving Size: 4 


 Ingredients:

  • Summa Salt’s Spicy Italian Salt

  • 1 cup orzo pasta

  • 2 tablespoons olive oil

  • 4 garlic cloves, minced

  • ¼ teaspoon ground ginger

  • 1/2 cup crumbled feta cheese

  • 1/2 cup Kalamata olives, pitted and sliced

  • 1/2 cup diced tomatoes

  • 1 tablespoon fresh lemon juice

  • 1 teaspoon lemon zest

  • ¼ teaspoon black pepper



Instructions:

  1. Cook the Orzo:

  • Bring a swirl large pot of salted (table) water to a boil.

  • Add the orzo and cook according to package instructions until al dente.

  • Drain the orzo and set aside.

  1. Sauté the Garlic:

  • In a large skillet, heat the olive oil over medium heat.

  • Add the minced garlic and sauté for about 1-2 minutes, until fragrant and golden.

  1. Combine Ingredients:

  • Add the cooked orzo to the skillet with the garlic and toss to combine.

  • Stir in the crumbled feta cheese, sliced Kalamata olives, diced tomatoes, and chopped spinach.

  • Cook for an additional 2-3 minutes until the spinach is wilted and all ingredients are warmed through.

  1. Season and Finish:

  • Add the fresh lemon juice and lemon zest to the orzo mixture.

  • Season with Summa Salt's Spicy Italian Salt and pepper.


Enjoy warm or chilled.
