Ingredients:
Summa Salt’s Spicy Italian Salt
1 cup orzo pasta
2 tablespoons olive oil
4 garlic cloves, minced
¼ teaspoon ground ginger
1/2 cup crumbled feta cheese
1/2 cup Kalamata olives, pitted and sliced
1/2 cup diced tomatoes
1 tablespoon fresh lemon juice
1 teaspoon lemon zest
¼ teaspoon black pepper
Instructions:
Cook the Orzo:
Bring a swirl large pot of salted (table) water to a boil.
Add the orzo and cook according to package instructions until al dente.
Drain the orzo and set aside.
Sauté the Garlic:
In a large skillet, heat the olive oil over medium heat.
Add the minced garlic and sauté for about 1-2 minutes, until fragrant and golden.
Combine Ingredients:
Add the cooked orzo to the skillet with the garlic and toss to combine.
Stir in the crumbled feta cheese, sliced Kalamata olives, diced tomatoes, and chopped spinach.
Cook for an additional 2-3 minutes until the spinach is wilted and all ingredients are warmed through.
Season and Finish:
Add the fresh lemon juice and lemon zest to the orzo mixture.
Season with Summa Salt's Spicy Italian Salt and pepper.
Enjoy warm or chilled.
