Ingredients:

  • 1 tablespoon sugar

  • 1/4 teaspoon salt

  • 4 oz cream cheese, softened

  • 3/4 cup buttermilk

  • 1 large egg

Instructions:

  • In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  • In another bowl, beat the softened cream cheese until smooth.

  • Add the buttermilk, egg, and vanilla extract to the cream cheese, and mix until well combined.

  • Pour the wet ingredients into the dry ingredients, and gently fold together until just combined. Don't worry about a few lumps; it adds character!

  • Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to coat the surface.

  • Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown on the other side, about 2-3 minutes per side.

  • Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
